Making Palm Wine

Cultural Narrative: 

This video show the typical method of producing palm wine in Eastern Indonesia. Mr. Maleakhi Tung Pas describes the process in his language, Western Pantar. Know as tua dala in the Western Pantar language, and sopi in Malay, palm wine is distilled from the fermented sap of the lontar or gebang palm. The ferment liquid is heated in an earthen pot and distilled through bamboo. 

Potable water is extremely scarse in the region of Western Pantar, due the presence of sulfur in the groundwater. Hence, the undistilled liquid, known in Wester Pantar as tua, provides an important source of nutrition and liquid in a the region.
